Sodium carbonate is an acidity regulator that is also used as an anti-caking agent, raising agent, stabilizer or thickener. For example, it regulates the acidity in certain cheeses, prevents the coagulation (curdling) of condensed milk and makes raw cocoa more fluid. The components of this additive (sodium and carbonate) perform important functions in the body and are naturally present in many foodstuffs. The intake of E500 is insignificant in comparison to the usual diet. No numerical Acceptable Daily Intake (ADI) has therefore been set for this additive and its consumption is considered not to be of concern for human health.
