E471 Mono et diglycérides d'acides grasMono- and diglycerides of fatty acids are used as emulsifiers or stabilizers in many foods. For example, they are used to conserve moisture in pasta and potato products, improve the spreadability of margarines, inhibit the exudation of fat from baked goods, and promote the aeration and expansion of ice cream. Various studies carried out on mice suggest that the consumption of this additive (and more generally, the consumption of emulsifiers) could cause an increase in the permeability of the intestinal barrier and thus promote chronic inflammatory diseases of the intestine, increased adiposity (metabolic syndrome), and the development of diabetes. These additives could also disturb the balance of the intestinal flora, promoting autoimmune reactions. The chronic intestinal inflammation caused by these emulsifiers could finally promote the development of colon cancer.
