E330 Acide citriqueCitric acid is a natural acid found in most fruits. On an industrial scale, it is produced by a fungus (Aspergillus niger) grown on a sweet nutrient solution. It is a common acidity regulator used in non-alcoholic soft drinks such as sodas. It also prevents the browning of foodstuffs and enhances the action of other antioxidants. Its consumption can lead to allergic reactions in people who are sensitive to mould, but such reactions are rare. It also seems that Aspergillus niger can produce mycotoxins. Finally, the damage caused to the teeth by this additive, in particular at the strong consumers of sodas, are regularly pointed out, with a particular vigilance for the children.
