Sodium lactate is the sodium salt of lactic acid (E270). Of natural origin, it is an antioxidant. It also acts as an acidity regulator, humectant, bulking agent, emulsifier and thickener. Its use is authorized in many foods. In general, lactic acid and its salts are metabolized without concern in the body and are considered safe.
