E296 Acide malique

Malic acid is found naturally in fruits (apples, pears and grape juice in particular). Its quantity decreases with their maturity. It can also be produced from fumaric acid through the action of certain micro-organisms. Malic acid gives a pleasant taste to food and prevents browning. It has an antibacterial and antioxidant function. Its use does not seem to present any risk.
