E262 Acétate de sodium, Diacétate de sodium, Ethanoate de sodium
It is the sodium salt of acetic acid (E260). The latter is one of the oldest food preservatives (it is notably the well-known active principle of vinegar). It is naturally present in many foods and in our metabolism. Its use does not seem to present any associated risk.
